Red Velvet Scones

I really love scones. I found this recipe for red velvet scones using cake mix and I was sold. I love making red velvet things, (especially brownies) but sometimes it’s a pain having to buy a bottle of red food coloring just for one dessert recipe. Using a cake mix was the perfect short cut!

These were tasty and easy. I’m sure completely from scratch would’ve been better- but this recipe totally satisfied my craving!

Here’s all it takes to make the scones:

-1 1/4 cup red velvet cake mix -1 1/4 cup of flour plus a little extra for dusting -8 tablespoons cold butter -3/4 cup of milk

Preheat your oven to 400 degrees. The original recipe says to prep a baking sheet with parchment paper or a silicon mat- and it specifically says do not grease. I didn’t have parchment paper or a silicon mat, so I improvised. (If you haven’t learned by now, I do a lot of improvising when I cook or bake.) I took a piece of foil and flattened it out on my baking sheet and sprinkled some flour on top. This worked like a charm- I was able to pull the scones right off with absolutely no sticking!

Combine the flour and the cake mix. (By the way, I’m thinking that since this recipe leaves red velvet cake mix I can use some to make baked donuts for Valentine’s Day morning! Weee!)

Use a pastry cutter or two knives to cut in the cold butter until the mixture is crumbly. I hate this part of scone making. I seriously need to get a pastry cutter. The two knives just take so much effort!

Create a well in the center and pour in the milk. Gently combine without over mixing.

On a floured surface, flatten out the dough into a circle that’s about 8 inches across.

Cut the dough into eight wedges. I used a greased cookie cutter- easy!

Put your scones on the baking sheet and bake them for 20 to 25 minutes, or until a toothpick inserted comes out clean. Mine only needed 20 minutes.

Pull them out when they’re done, and place them on a wire rack to cool.

While they’re cooling you can whip up the frosting. I tried to find a recipe for a cream cheese glaze, and found this recipe which didn’t come out “glazey” enough for me.  I followed it for the most part, but I didn’t have any lemon juice so I just left that out. Next time I’ll try a different recipe! It was still tasty, don’t get me wrong- I was just hoping for a different texture. Anyway- here’s what you need to make it:

-4 oz cream cheese -1/2 cup powdered sugar -pinch of salt -3 tablespoons of milk

With an electric mixer, mix the cream cheese for about four to five minutes until light and fluffy. Add sugar and beat until combined. Add salt and milk and beat until smooth. Add more milk if needed.

I put the glaze/frosting mixture into a Ziploc bag, snipped of the end and drizzled it on top of the scones.

And that’s all it takes! These were delicious and best still warm from the oven. I definitely felt like I was eating dessert for breakfast. I’m not complaining;)
