Green Pancakes For St. Patty’s Day

Two words you guys… green pancakes!  You may have read about how super excited I was to make these from this post.  My inspiration came from the pancake pictures Jessica from Little Baby Garvin shared.  Check them out here. And if you haven’t read her blog, I highly recommend putting it on your “blogs to read” list!  She’s hilarious!

Anyway, I love pancakes from scratch- so I was dying to make these festive flapjacks!  I topped them with homemade whipped cream and Lucky Charms.  Delicious.  Here’s what you need:

  • Between 3/4- 1 cup flour
  • 1 tablespoon sugar
  • 1/2 tablespoon baking powder
  • 1/8 teaspoon salt
  • 1 egg
  • 3/4 cup milk
  • 1 1/2 tablespoon oil
  • 1/2 teaspoon vanilla
  • green food coloring
  • dash of cinnamon
  • dash of brown sugar

For the whipped cream:

  • 3/4 cup heavy whipping cream
  • 1/2 teaspoon vanilla
  • tablespoon sugar (or how much you want to use, really)

To make the pancakes, start by sifting together the flour, sugar, baking powder, and salt.  In a small bowl, whisk together the egg, milk, oil, and vanilla.  Stir the wet ingredients into the flour mixture and combine.  This would make a basic pancake recipe, but I like to add a bit of cinnamon and brown sugar.  IMG_7327cOnce you’ve mixed all your ingredients, add in the food coloring.  I didn’t use a lot, just enough to give the batter a soft green hue.IMG_7331cGrease a skillet (I just use cooking spray) and heat the skillet to medium.  I use a 1/4 cup measuring cup to scoop the batter and keep my pancake sizes consistent.  Wait for the edges of the pancake to get those little bubble holes and then flip it.  The second side usually only needs about a minute. This recipe only makes about 5 or 6 pancakes. Since it’s just me and my hubby, we don’t need to make any more than that. IMG_7333cFor the whipped cream, beat the heavy whipping cream and vanilla together until it starts to thicken.  Add in the sugar and continue beating until it gets fluffy.  This was the first time I had ever made whipped cream before, and I like it so much more than store bought!  Plus, it’s super easy!  I’m thinking I’ll add cinnamon to it next time.  Add a heaping scoop of the whipped cream to the top of your pancakes and sprinkle some Lucky Charms on top. IMG_7339cAnd then you get to eat them– the best part in my book.  I love pancakes from scratch, and now I love whipped cream from scratch.  And pairing the two together?  I think I have a new favorite brunch item.

I also threw together some cottage fried potatoes and my husband cooked up some bacon.  Paired with two large iced coffees, our St. Patrick’s Day Eve brunch was complete. IMG_7350c
