Hey you guys! I hope you all are enjoying the tail end of summer! I still can’t believe it’s already August- before we know it, it’ll be fall! One thing I love about summer is the abundance of fruit. I always end up getting free fruit which is\u00a0aweeesome!\u00a0<\/em>This year I ended up with more apricots than I could possibly eat, so I set out to bake with them. The first thing on my mind? Apricot bread! I’ve never eaten apricot bread before, or heard of it really for that matter- but I thought, why not? If zucchini can make a delicious bread, then so can apricots! And, boy, was I right!<\/p>\n

It turns out apricot bread is delicious! The perfect way to use up some of these babies…<\/p>\n

Here’s what you need:<\/p>\n

-2 cups flour
\n-1 1\/2 teaspoons baking powder
\n-1\/2 teaspoon baking soda
\n-1\/4 teaspoon salt
\n-a couple dashes of cinnamon
\n-2 eggs, beaten
\n-4 apricots
\n-1\/2 cup coconut oil
\n-3\/4 cup sugar
\n-drizzle of honey<\/p>\n

Preheat the oven to 350 degrees and spray a bread pan with non-stick spray. In a large bowl, combine the flour, baking powder, baking soda, salt, and cinnamon. I didn’t measure my cinnamon, just sprinkled a couple dashes. Like this:<\/p>\n

I like cinnamon, a lot. I think this bread would be just as tasty without it though, if you’re not a fan.<\/p>\n

I tore my apricots in half and removed the pits. I threw them in my food processor with the coconut oil and whirred away until I had a lumpy apricot mess.<\/p>\n

It kinda looks like pumpkin, right? I know it looks less than appealing, but it smelled so good! Ahh, coconut oil- you are wonderful!<\/p>\n

Next, combine eggs, apricot\/coconut oil mixture, and sugar. I took this moment to drizzle in my honey. Add apricot mixture to the flour mixture and stir until combined. It will look a little something like this:<\/p>\n

Spoon the batter into your bread pan.<\/p>\n

I love that color and texture:)<\/p>\n

Throw it in the oven and bake for 55-60 minutes. (Or until you poke it with a toothpick and it comes out clean.)<\/p>\n

As with most breads, this will smell delicious baking in the oven!<\/p>\n

And there it is, hot from the oven! I honestly didn’t know what to expect, and I was a little nervous with how the texture would turn out, but it was perfect. This bread exceeded my expectations in every way. It’s sweet and the apricot taste is subtle. I love being able to taste the coconut oil- such a perfect addition!<\/p>\n
