And if you haven&#8217;t read her blog, I highly recommend putting it on your &#8220;blogs to read&#8221; list! \u00a0She&#8217;s hilarious!<\/p>\n<p>Anyway, I love pancakes from scratch- so I was dying to make these festive flapjacks! \u00a0I topped them with homemade whipped cream and Lucky Charms. \u00a0<i>Delicious. \u00a0<\/i>Here&#8217;s what you need:<\/p>\n<ul>\n<li>Between 3\/4- 1 cup flour<\/li>\n<li>1 tablespoon sugar<\/li>\n<li>1\/2 tablespoon baking powder<\/li>\n<li>1\/8 teaspoon salt<\/li>\n<li>1 egg<\/li>\n<li>3\/4 cup milk<\/li>\n<li>1 1\/2 tablespoon oil<\/li>\n<li>1\/2 teaspoon vanilla<\/li>\n<li>green food coloring<\/li>\n<li>dash of cinnamon<\/li>\n<li>dash of brown sugar<\/li>\n<\/ul>\n<p>For the whipped cream:<\/p>\n<ul>\n<li>3\/4 cup heavy whipping cream<\/li>\n<li>1\/2 teaspoon vanilla<\/li>\n<li>tablespoon sugar (or how much you want to use, really)<\/li>\n<\/ul>\n<p style=\"text-align: left;\">To make the pancakes, start by sifting together the flour, sugar, baking powder, and salt. \u00a0In a small bowl, whisk together the egg, milk, oil, and vanilla. \u00a0Stir the wet ingredients into the flour mixture and combine. \u00a0This would make a basic pancake recipe, but I like to add a bit of cinnamon and brown sugar. \u00a0<a href=\"https:\/\/momentsdontcollectdust.com\/wp-content\/uploads\/2014\/03\/IMG_7327c.jpg\"><img loading=\"lazy\" decoding=\"async\" class=\" wp-image-1061 aligncenter\" src=\"https:\/\/momentsdontcollectdust.com\/wp-content\/uploads\/2014\/03\/IMG_7327c-1024x682.jpg\" alt=\"IMG_7327c\" width=\"614\" height=\"409\" srcset=\"https:\/\/momentsdontcollectdust.com\/wp-content\/uploads\/2014\/03\/IMG_7327c-1024x682.jpg 1024w, https:\/\/momentsdontcollectdust.com\/wp-content\/uploads\/2014\/03\/IMG_7327c-300x200.jpg 300w\" sizes=\"auto, (max-width: 614px) 100vw, 614px\" \/><\/a>Once you&#8217;ve mixed all your ingredients, add in the food coloring. \u00a0I didn&#8217;t use a lot, just enough to give the batter a soft green hue.<a href=\"https:\/\/momentsdontcollectdust.com\/wp-content\/uploads\/2014\/03\/IMG_7331c.jpg\"><img loading=\"lazy\" decoding=\"async\" class=\" wp-image-1063 aligncenter\" src=\"https:\/\/momentsdontcollectdust.com\/wp-content\/uploads\/2014\/03\/IMG_7331c-1024x682.jpg\" alt=\"IMG_7331c\" width=\"614\" height=\"409\" srcset=\"https:\/\/momentsdontcollectdust.com\/wp-content\/uploads\/2014\/03\/IMG_7331c-1024x682.jpg 1024w, https:\/\/momentsdontcollectdust.com\/wp-content\/uploads\/2014\/03\/IMG_7331c-300x200.jpg 300w\" sizes=\"auto, (max-width: 614px) 100vw, 614px\" \/><\/a>Grease a skillet (I just use cooking spray) and heat the skillet to medium. \u00a0I use a 1\/4 cup measuring cup to scoop the batter and keep my pancake sizes consistent. \u00a0Wait for the edges of the pancake to get those little bubble holes and then flip it. \u00a0The second side usually only needs about a minute. This recipe only makes about 5 or 6 pancakes. Since it&#8217;s just me and my hubby, we don&#8217;t need to make any more than that.\u00a0<a href=\"https:\/\/momentsdontcollectdust.com\/wp-content\/uploads\/2014\/03\/IMG_7333c.jpg\"><img loading=\"lazy\" decoding=\"async\" class=\" wp-image-1069 aligncenter\" src=\"https:\/\/momentsdontcollectdust.com\/wp-content\/uploads\/2014\/03\/IMG_7333c-1024x682.jpg\" alt=\"IMG_7333c\" width=\"614\" height=\"409\" srcset=\"https:\/\/momentsdontcollectdust.com\/wp-content\/uploads\/2014\/03\/IMG_7333c-1024x682.jpg 1024w, https:\/\/momentsdontcollectdust.com\/wp-content\/uploads\/2014\/03\/IMG_7333c-300x200.jpg 300w\" sizes=\"auto, (max-width: 614px) 100vw, 614px\" \/><\/a>For the whipped cream, beat the heavy whipping cream and vanilla together until it starts to thicken. \u00a0Add in the sugar and continue beating until it gets fluffy. \u00a0This was the first time I had ever made whipped cream before, and I like it so much more than store bought! \u00a0Plus, it&#8217;s super easy! \u00a0I&#8217;m thinking I&#8217;ll add cinnamon to it next time. \u00a0Add a heaping scoop of the whipped cream to the top of your pancakes and sprinkle some Lucky Charms on top.\u00a0<a href=\"https:\/\/momentsdontcollectdust.com\/wp-content\/uploads\/2014\/03\/IMG_7339c.jpg\"><img loading=\"lazy\" decoding=\"async\" class=\"wp-image-1071 aligncenter\" src=\"https:\/\/momentsdontcollectdust.com\/wp-content\/uploads\/2014\/03\/IMG_7339c-735x1024.jpg\" alt=\"IMG_7339c\" width=\"529\" height=\"737\" srcset=\"https:\/\/momentsdontcollectdust.com\/wp-content\/uploads\/2014\/03\/IMG_7339c-735x1024.jpg 735w, https:\/\/momentsdontcollectdust.com\/wp-content\/uploads\/2014\/03\/IMG_7339c-215x300.jpg 215w\" sizes=\"auto, (max-width: 529px) 100vw, 529px\" \/><\/a>And then you get to eat them&#8211; the best part in my book. \u00a0I love pancakes from scratch, and now I love whipped cream from scratch. \u00a0And pairing the two together? \u00a0I think I have a new favorite brunch item.<\/p>\n<p style=\"text-align: left;\">I also threw together some cottage fried potatoes and my husband cooked up some bacon. \u00a0Paired with two large iced coffees, our St. Patrick&#8217;s Day Eve brunch was complete.\u00a0<a href=\"https:\/\/momentsdontcollectdust.com\/wp-content\/uploads\/2014\/03\/IMG_7350c.jpg\"><img loading=\"lazy\" decoding=\"async\" class=\" wp-image-1068 aligncenter\" src=\"https:\/\/momentsdontcollectdust.com\/wp-content\/uploads\/2014\/03\/IMG_7350c-745x1024.jpg\" alt=\"IMG_7350c\" width=\"522\" height=\"717\" srcset=\"https:\/\/momentsdontcollectdust.com\/wp-content\/uploads\/2014\/03\/IMG_7350c-745x1024.jpg 745w, https:\/\/momentsdontcollectdust.com\/wp-content\/uploads\/2014\/03\/IMG_7350c-218x300.jpg 218w\" sizes=\"auto, (max-width: 522px) 100vw, 522px\" \/><\/a><\/p>\n<p style=\"text-align: center;\">Wishing you all a happy Sunday!<\/p>\n","protected":false},"excerpt":{"rendered":"<p>Happy St. Patty&#8217;s Day Eve!
