Soups on!

It’s been COLD around here people. Last week there was a cold spell that felt like it would never end. After feeling the sixties again [in Vegas] it’s been hard dealing with these below freezing temps. Plus, the flu’s been going around and took my hubs for one of its victims. All I can say is THANK GOODNESS it’s National Soup Month! That’s one thing that always helps when the weather is bitter cold and the flu is making its rounds.

At my house, we always have chicken stock on hand (thank you Costco) – and depending on the veggies we have at the time, I can usually always throw a soup together on a cold blustery night. Soup is a great thing to make where you can toss in a bunch of those “use it or lose it” veggies you may have in your fridge.

So far this month I’ve made soup a few different times. Chicken noodle, potato broccoli, egg drop… I’ve loved them all. Soups are souper easy (see what I did there?), convenient, comforting, and tasty. I recently created a new board on Pinterest that I’ve been filling with yummy soup recipes I’m hoping to try out. Here are a few of them!
