Healthy Baked Chicken Nuggets

It’s been awhile since I’ve posted! Yeesh, I hate that! I think I’m finally wrapping up my non-stop super busy weekends, which means I’ll have a little more time for writing:) Last weekend I went to Boise for the first time to visit my dear friend and roommate from college. It was a blast! But more on that later…

Since I’m back in town, I feel like I can get back into the swing of things with meal planning! For awhile there I was trying to use up the random things we had in the house, which isn’t always a bad thing. I love getting to pair random things to make a tasty meal. Today I’m sharing one of these meals!

Have you heard of Skinnytaste.com? I can’t say enough good things about it! Gina, the recipe-mastermind, has so many AMAZING recipes that are low fat, but don’t taste low fat. She’s a genius! These baked chicken nuggets are one of my “keeper” recipes I found on her site. They are so easy, so tasty, and I usually have everything on hand to make them! To go with my nuggets, I made pasta with stewed tomatoes. This is such an easy thing to throw together that has such great flavor. It was actually one of my favorite things my mom would make when I was in high school! While my spaghetti noodles were boiling, I heated a can of stewed tomatoes with two tablespoons of butter and a bit of salt and pepper over medium-high heat. I stirred the tomatoes while they cooked, crushing the larger chunks with my wooden spoon. After my noodles were done, I poured the stewed tomatoes over the noodles and sprinkled in some Parmesan cheese. Yum!

I also heated up a can of green beans to have as well. Overall, it was a random but very tasty meal. Variety is the spice of life!

I really actually enjoy these kinds of meals, but I’m also a huge fan of having my meals planned out. Happy Monday, all!
