Hey there!
I’m back from my blog hiatus! I’ve been MIA because of – well, LIFE. This has been such a busy year, but a good one, and I’m so glad to be back at the keyboard.
How is your summer going? Mine has been pretty fab – I plan to tell you all about it in future blog posts:)
I’ve been crossing things off my summer bucket list, and last weekend I got to cross of “take the dogs camping.” We went up to Alta Lake State Park which is just a few miles outside of Pateros, WA. I had never been, it just happened to be one of the few places nearby that had a site available on Friday night, so we snatched it up.
Friday after work we loaded up the car and headed out. When we arrived, I was super excited to see that our campsite had a decent lake view. A fire had gone through the state park back in 2014, so there was some fire damage on some of the trees, but sites were actually in much better shape than I’d imagined. Our campsite was really large, with three distinct areas plus a picnic table. (All campsites have a picnic table, which I thought was pretty awesome.)
We set up our tent right away, and started our dinner next. We picked up some carne asada, which the hubby grilled. I had sliced mushrooms the night before and marinated them in olive oil and garlic overnight, so I poured them out onto foil and wrapped it up to put on the grill. They sauteed perfectly this way! When the steak was done, we topped it with havarti cheese, put it on a hoagie, topped with the mushrooms and had delicious steak and mushroom sandwiches for dinner! Served with grilled corn on the cob and watermelon! I love summer meals.
After dinner we walked the dogs down by the lake. It was so warm – the perfect temperature actually. When we got back to our site we had Jones of WA wine while we played cribbage by the light of our lantern until bedtime.
In the morning we used my new french press for coffee and had a breakfast of hard boiled eggs, muffins, and watermelon. We started packing up some of our stuff after a lazy morning (since we were only staying the one night), and then took the dogs down by the lake to get in the water. It was really warm out, so they loved splashing around.
Even though it was a short camping trip, it was so much fun. I loved Alta Lake, and definitely plan to be back sometime.
