Long Island Iced Tea

Happy June!

It sure is feeling like summer ’round here with highs in the 80s!  This past weekend my brother took his boat out, and it felt so nice to be out on the water!  Boating is my absolute favorite thing to do in the summer.  After, we had a family bbq- which is also a summer favorite of mine.  Other weekend highlights were a game night, breakfast at one of my favorite local spots with a friend, and trying on my bridesmaid dress for our friends’ Alec & Holly’s October wedding.

Today I’m going to share a Long Island Iced Tea recipe that my hubby found awhile back- and I don’t think we will ever need another recipe.  These things are gooood!!

My bestie and I did these pictures in March when the weather had warmed up just enough for us to drink cocktails on the deck. I wanted her to try these Long Island Iced Teas so bad because I knew she would love them, so we made a batch.  I was totally right, she took one sip and said, “Holy s*** that’s good.”  Hah, I love her.  Here’s the recipe we used.

As you probably already know, Long Islands are super strong, and this recipe is no exception.  I added a LOT more coke than the recipe calls for.  It’s easy, just pour until you like the taste.   (You can probably tell I used a lot more in the picture… haha- our drinks are as dark as soda!)  Toss in a lemon wedge or two and the drink is complete.

Now that June is here, it’s the perfect time to have some friends over and mix up a batch of Long Island Iced Teas, relax outside and catch some rays.  I may have just added this to my summer to do list…
